After primary fermentation, the wine was bottled and left to age on the lees in triage for 20 months. This sparkling blanc de noir is finished with no dosage allowing the Pinot to stand out on the nose with crisp and floral notes. The first sip invites small bubbles to effervesce off the tongue. The palate is acidic and dry with a lingering finish.
