LVVR is a méthod champenoise, or traditional method sparkling produced entirely in the Lodi appellation. No part of the production is outsourced. Every part of the product is controlled directly by Owner and Winemaker, Eric Donaldson. The fruit is sourced entirely within the Lodi appellation. LVRR Sparkling wines are aged lightly on the bottle lees prior to riddling and disgorging.
Method Champenoise provides an elegant and long-lasting sparkling wine since the bubbles are produced through fermentation in the bottle. The fermentation takes much longer resulting in a much finer bubble. Due to the nature of the chemistry of bottle fermentation, there is a much higher level of craftsmanship in producing method champenoise compared to other methods of producing sparkling wine.
